Autumn Salad with SweeTango and Brussels Sprouts
Blogger Jehan created this gorgeously delicious fall salad recipe for the SweeTango growers’ cooperative in 2015. About SweeTango, she says: “This isn’t your apple pie apple; with hints of honey, citrus and spice, the best way to enjoy this apple is to eat it as is. - 5 c shaved Brussels sprouts, hard cores discarded
- ½ c sliced almonds
- 1/3 c dried cranberries
- 1 SweeTango, cored and thinly sliced
- ¼ t crushed garlic
- ¼ t black pepper
- 1 t Dijon mustard
- ¼ c olive oil
- ¼ c apple cider
- 1 t apple cider vinegar
- To make the dressing, place the crushed garlic, black pepper, Dijon mustard, olive oil, apple cider and apple cider vinegar in a bowl and whisk to combine or place in a jar and shake to combine.
- To make the salad, place Brussels sprouts, almonds, cranberries and SweeTango in a bowl. Pour the salad dressing over top and toss to coat evenly. Refrigerate for 2 hours before serving.
