How to freeze and concentrate cider

Pepin Heights cider can be frozen indefinitely. Simply pour off an inch or two of liquid from the jug before placing it in the freezer, to allow the remaining cider to expand in the jug as it freezes.

You can also concentrate cider for use as a dessert topping or for cooking, by freezing it. Then remove the lid, and invert the frozen jug over a bowl. When one-fourth to one-third of the now-concentrated cider has seeped out into the bowl, discard the jug and the ice that remains in it.
